I INGREDIENTS • 5 tbsp Olive Oil • 3 Large Onions, Chopped • 2 Cloves Garlic, Minced • 2 tbsp Ho t Pimento Paste (Use Less or More to Liking) • 1/4 Cup Tomato Sauce • 1 Cup Red Wine • 1 Cup Hot Water • Salt To Taste (Remember the Pimento Paste Is Salty) • 1/2 tsp White Pepper (Sub Black Pepper) • 2 (19 Ounce) Cans Fava Beans or Equivalent Dried and Soaked • 1 Portuguese Sausage (Chourico) Sliced (Can be Hot or Mild) • 2 Cups Schneiders Hot Italian Sausage Meat DIRECTIONS 1. Heat oil in a large saucepan over medium heat. 2. Sauté onion and garlic until golden brown. 3. Stir in pimento paste and let cook for 2 minutes. 4. Stir in t omato sauce, wine, hot water, salt, pepper, and both types of sausage. 5. Let it cook/boil for 10 to 15 minutes, reduce heat, add fava beans and simmer for an hour or until the beans are soft.
