Cook pasta al dente according to package directions. Set aside 1 cup of pasta water. 2. Heat a large skillet over medium-high heat. Add sausage, garlic and minced onion and break up sausage with a wooden spoon. Cook for about 5 minutes, stirring until browned. Drain and set aside. 3. In the same pan cook mushrooms, jalapeño peppers and red pepper flakes until mushrooms begin to sweat. 4. Add undrained tomatoes, tomato paste, pasta water, red pepper flakes to the pan and simmer for approximately 10 minutes on low heat. 5. Add Sausage meat mixture to sauce mixture and simmer for an additional 10 minutes. 6. Just prior to serving, add in drained pasta and f reshly grated parmesan cheese. Season with salt and pepper. 7. Serve with a garnish of sliced jalapeño peppers and more parmesan cheese. Tip: For more of a kick, keep seeds in jalapeño peppers. The seeds are where the heat is.
