Culinary Creations 19 HOT BUNS: SAVOURY BISCUITS WITH HOT ITALIAN CRUMBLE & SWISS CHEESE From The Kitchen Of The Carignan Family INGREDIENTS • 4 oz Schneiders Hot Italian Sausage Meat, Cooked and Cooled • 4 Cups All-Purpose Flour • 4 oz Shredded Swiss Cheese • 4 tsp Baking Powder • 1 ½ tsp Kosher Salt • 1 tsp Baking Soda • 3/4 Cup Unsalted Butter, Frozen • 1 ¾ Cups Buttermilk DIRECTIONS 1. Preheat the oven to 450°F. Line a baking sheet with parchment paper or a silicone baking mat. 2. Heat a large skillet over medium high heat. Add Hot Italian Crumble and cook, about 6-8 minutes. Drain excess fat; transfer Hot Italian Crumble to a paper towel-lined plate and let cool. 3. In a large bowl, combine Hot Italian Crumble, flour, cheese, baking powder, salt and baking soda. 4. Grate butter using the large holes of a box grater. Stir into the flour mixture. 5. Add buttermilk and stir using a rubber spatula until a soft dough forms. 6. Working on a lightly floured surface, knead the dough 3-4 times until it comes together. Using a rolling pin, roll the dough into a 1 1/4-inch thick rectangle. Cut out 10-12 rounds using a cookie cutter (I just rolled mine that’s why they don’t look perfect). Place biscuits onto the prepared baking sheet; place in the f reezer for 15 minutes. 7. Remove biscuits f rom the f reezer. Place into the oven and bake for 15-18 minutes, or until golden brown. 8. Serve warm.
