36 Culinary Creations PULLED PORK SPEEDY STIR-FRY From the Cordeiro Household INGREDIENTS • 4 cups Schneiders Slow Roasted Pulled Pork • 4 tbsp sesame oil • 1 small onion (diced) • 2 cloves of garlic • One 1-inch piece of ginger, peeled and minced • 2 red or yellow peppers (seeded & sliced into strips) • 8 Mushrooms (sliced) • 4 cups cooked rice • 2 eggs (lightly beaten) • 4 tsps fish sauce • 2 tbsp Sriracha or hot sauce of your choice • 4 tbsp soy sauce • Cilantro (optional) • Juice of 1 lime zested and juiced (optional) DIRECTIONS 1. Heat 2 tbsp sesame oil in a wok or f rying pan over medium-high heat – add onion and cook until translucent. Add peppers and mushrooms, garlic and ginger and cook until soft add pulled pork and stir all together to heat. Remove to a bowl for later use. 2. To the same wok or pan on medium heat add another 2 tbsp sesame oil and add the cooked rice to f ill the entire bottom of the pan and add the eggs, reserved pulled pork & vegetables, f ish sauce, sriracha or hot sauce of choice without stirring for a few minutes (3-5 mins). 3. Add the soy sauce and cilantro if using and remove f rom heat and stir. The heat will cook the eggs and the sauce will loosen up any stuck bits of the rice. Add the juice and zest of the lime and stir. ENJOY!!!
