Culinary Creations 37 STUFFED PEPPERS From The Fortier Family Kitchen INGREDIENTS • 2 cups of Schneiders Slow Roasted Pulled Pork • 3 Red, yellow, orange peppers • 2 cups of cooked white rice (you can use brown rice, farro or quinoa..) • 2 cups of frozen vegetable mix (usually use the spaghetti mix) • ½ cup of hot water • 1 can of pizza sauce 213ml • 1 ½ cups o f shredded Cheese you could use Monterey jack or mozzarella or whatever’s on hand • Seasoning: Italian seasoning, salt, and pepper DIRECTIONS 1. In a large bowl put the pulled pork and the hot water and stir until the pork is loose. 2. In a non-stick pan, sauté the vegetables until soft. Then add the pulled pork, the rice, the pizza sauce, Italian seasoning, salt, and pepper. 3. Spoon the stuff ing into each bell pepper half, then top with cheese. 4. Put in the oven for 20 to 25 minutes. This will allow the flavours to settle, the bell peppers will be fully cooked, and the cheese will melt and brown a little.
