Culinary Creations 17 BOURBON, MAPLE, BERRY, PULLED PORK WAFFLE From The Jeanson Family Kitchen INGREDIENTS • 1 package of Schneiders Slow Roasted Pulled Pork • 8 Belgium Waffles • Maple Cinnamon Apple sauce • Spicy Bourbon Blueberry Sauce DIRECTIONS 1. In a large pan add pulled pork and ample cinnamon apple sauce on medium heat until warm. Place cooked Belgium waffle on plate and top with a 5-6 oz portion on the pull pork in sauce. Drizzle spicy bourbon blueberry sauce on top and serve. MAPLE CINNAMON APPLE SAUCE INGREDIENTS • 1 green apple • 1 red apple • ½ tablespoon cinnamon • ¼ cup water • ½ tablespoon lemon juice • chopped pecans MAPLE CINNAMON APPLE SAUCE DIRECTIONS 1. Chop apples into small chunks, then add all ingredients into a medium sauce pan and mix. Cover and simmer over medium heat for 12- minutes. Sprinkle in pecan. SPICY BOURBON BLUEBERRY SAUCE INGREDIENTS • 1 cup blueberries • ¼ cup maple syrup • ¼ cup bourbon • ½ cup water • ½ teaspoon chipotle powder • ¼ teaspoon pink Himalayan salt • ½ tablespoon cornstarch • 1 tablespoon o f unsalted butter SPICY BOURBON BLUEBERRY SAUCE DIRECTIONS 1. Add blueberries, maple syrup, bourbon, water, chipotle powder and salt in a medium sauce pan on medium heat. Heat until blueberries become soft (about 10-15 minutes). Reduce heat to low and continue to cook stirring occasionally. 2. Mix cornstarch with 1 tablespoon of water mix well and stir into blueberry mix. Continue to cook for 5 minutes until it thickens. Stir in butter until melted and remove f rom heat to cool.
