Culinary Creations 23 SIMPLY PULLED, SHEPHERD’S PIE From The McLeod Kitchen INGREDIENTS • 1 ½ lb Schneiders Slo w Roasted Pulled Pork • 1 small onion chopped finely • 1 med carrot diced • 1 cup frozen peas/corn • 2 garlic cloves minced • 1 cup pork gravy (or ½ cup chicken broth) • ½ tsp salt • ¼ tsp pepper • ½ tsp dried thyme • 2-3 cups mashed potatoes • ¼ cup shredded cheese (or more if you are a cheese lover) DIRECTIONS 1. In a skillet , heat a small amount of oil, and add veggies, cook just until softened. Add the gravy (or broth), garlic, salt, pepper and thyme, stir. Add the pulled pork and toss together. 2. If you have an oven safe skillet, spread mashed potatoes over the pork mixture, smoothing as needed (brush a little milk on top for a golden crust). Place in the oven for approx. 20 minutes. Remove f rom oven, add the shredded cheese to the top, and bake (or broil) for another 5-10 minutes until cheese has melted. 3. If you do not have an oven safe skillet, use a casserole dish that has been buttered or sprayed to prevent sticking. 4. This is a simple recipe , but it is always enjoyed by the whole family. You can also prepare ahead of time, and keep in the f ridge, or f reezer. Enjoy! Tammy McLeod
