PULLED PORK SUNDAE WITH BOURBON BAKED BEANS & SKILLET CORNBREAD From The Hall F chen amily Kit BAKED BEANS INGREDIENTS (Hint: have some patience and start preparing 2 days in advance) • 1 lb dried navy beans (soaked 8 hours to double in size) • 12 strips Mitchell’ s Thick-Cut Bacon chopped • 1 medium onion chopped • 2 cloves garlic minced • 3 cups water • ½ cup chili sauce • ¾ cup barbecue sauce • 3 tbsp tomato paste • ¼ cup apple cider vinegar • ¾ cup bourbon • 1 tbsp cayenne pepper flakes • 2 tbsp molasses • 1 ½ tbsp ground mustard • ½ cup brown sugar BAKED BEANS DIRECTIONS 1. Sauté bacon and add chopped onion & garlic. Continue sautéing until onions are sweating. Drain off excess fat. 2. Combine with all other ingredients in a slow cooker and set at low. Cook for 10-12 hours – stirring occasionally. 3. Season to taste. Don’t add salt too early as it slows the beans softening process. 4. If they seem too “liquidy”, turn to warm and leave for an additional ½ - 2 hours until thickened.
