38 Culinary Creations SAUSAGE KALE RIGATONI m y n Fa il so John The hen Of om T e Kitc h Fr INGREDIENTS • 2tbsp Extra Virgin Olive Oil • 2lbs of Schneiders Hot Italian Sausage Meat • 2 Medium Shallots • 1tsp Red Pepper Flakes • 8oz of Kalamata Pitted Black Olives • 2lbs of Cleaned Kale • 16oz Chicken Broth • 8oz White Wine • 1tbsp Garlic Powder • 1tbsp Salt • 16oz Diced Roma Tomatoes • 2lbs Rigatoni DIRECTIONS 1. Place extra virgin olive oil in a saucepan on medium heat. Crumble the Italian sausage into balls that look like a large marble. 2. Add the Italian sausage, shallots, red pepper flakes to the olive oil. 3. Cook the sausage to a golden brown appearance. 4. Make sure that you do not cook the Italian sausage too much as you do not want it to get overcooked. Cook the sausage for about 20 minutes. Drain cooked sausage. 5. Place the chicken broth, wine, garlic powder and salt in the saucepan. Place it on the stove at low heat and add sausage. Cook for about 15 minutes. Add the other ingredients and then cook for another 10 minutes. 6. Serve over Rigatoni.
