10 Culinary Creations MAPLE LEAF KOREAN BBQ PULLED PORK TACOS From The Kitchen Of The Desousa Family SPECIAL SAUCE • 2 tbsp olive oil • 2 tsp sesame oil • 6 garlic cloves-minced • 4 tbsp honey • 2 tsp ginger- fresh minced • 4 tsp sriracha sauce • 1/2 cup soya sauce • Black pepper SPICY MAYO • 1/2 cup mayo • 1/2 cup sour cream • Fresh minced garlic • 1 1/2 tsp cumin • 1 tbsp lime juice • 1 -3 tbsp sriracha • Salt to taste RED SLAW • ½ head red cabbage, shredded • 2 tbs fresh Parsley chopped • 1 tbsp Apple cider vinegar • 2 tbsp Olive oil • 1 tsp Monk fruit or sugar • Salt & pepper to taste DIRECTIONS 1. Mix it all together and let it sit while you get your pork going on the BBQ. Heat your Pork on the BBQ for 15-20 minutes on medium heat, add in your delicious special sauce let it all dance together for another 15 minutes. It won’t take long because our pulled pork is precooked which even makes this recipe more simple and quick. 2. While you are waiting, get your tortillas grilling right next to your pork!! 3. ***In the kitchen get your Spicy mayo and red slaw ready BEFORE you put your pork on the BBQ*** 4. Taste slaw and adjust accordingly. 5. Prep and mix ahead of time the longer it sits the better the flavours intensify. 6. You can also use coleslaw mix. But the red cabbage looks so rich and colourful on our delicious pulled pork!! 7. Serve on “warm grilled” blue corn tortillas – gluten-f ree or regular tortillas. Doesn’t matter whatever you fancy both are so yummy. 8. Don’t forget to grill your tortillas to get a nice char on them! 9. Now to put it all together 10. Take your warmed charred tortilla & spread a nice bit of your spicy mayo, then the main attraction- maple leaf Korean BBQ pulled pork 11. Garnish with f resh cilantro, Green onions, a few slivers of red onions and a wedge of lime for extra zest! 12. You can also add roasted peanuts or cashews as a topping for extra crunch! 13.
